It’s not very often that a new fruit shows up in the produce section of your grocery store, but this month, for the first time ever, a new variety of grapefruits is being distributed nationwide. Wonderful Sweet Scarletts, red grapefruits that are sweeter-tasting than your typical white or pink grapefruits, have been available in Texas for a while—but they’re just now being shipped to supermarkets across the country.
They taste great on their own (half a medium grapefruit packs 60 calories and 100 percent of your recommended daily value of vitamin C). But if you really want to step up your fruit game, chef Tara Bench recommends bruleeing them. It’s surprisingly simple to do—just follow these steps:
1. Slice grapefruit in half between the stem and blossom end.

2. Cut around each segment to separate from the membrane, and pour off any excess juice from the top of the grapefruit.

3. Sprinkle each half generously with raw sugar, covering entire surface.

4. Use a kitchen torch to evenly heat sugar until it starts to melt.

5. Continue heating melted sugar until it starts to bubble and caramelize.

6. Let cool about one minute, and enjoy!
