Cauliflower Tabbouleh
Serves 4- Finely chop the cauliflower into small, grain-like pieces.
- Add all the chopped vegetables and herbs to a bowl and mix well.
- Drizzle in the lemon juice, olive oil, salt, and pepper.
- Mix it all well and do a taste test.Add more lemon juice, salt, or pepper if needed.
NOTE: This refreshingly lemony and minty dish works well on its own, as part of a hummus platter, or as a side dish for fish, chicken, or lamb. It's also great for those on a vegan, gluten-free or Paleo diet.
