The Meal That Made Mindy Kaling Stop Hating Healthy Food

You have to see the good-for-you dish she's raving about.

Is Mindy Kaling really raving about green juice and salad? We never would have believed it—after all, TV's funniest chick tends to talk trash about dieting, and she fills her Instagram page with snaps of decadent treats. But then this photo of some delicious-looking summer greens showed up in our Instagram feed:


I've eaten healthily about four times and hated it every time, but not this time. Powerplant Superfood Cafe. This Purify juice is spinach, celery, dandelion, ginger, cilantro, apple and lemon. The Sunrise Salad (two things I detest individually) is greens, shaved organic soft boiled egg, forbidden rice, crumbled tempeh bacon and pickled blueberries. Try it! I've gone crazy!

Mindy doesn't explain what exactly makes this meal so insanely tasty, but we're guessing that she loves it because the salad features items prepared so creatively—for example, it contains pickled blueberries and bacon-flavored tempeh with ginger and dandelion. It's a good reminder that, even if you think you hate certain good-for-you ingredients, it's worth trying them when they're prepared in new ways you haven't sampled before.
