It’s no surprise that you should limit your sugar consumption, but the dangers of loading up on the sweet stuff seem to be even more buzzed about lately. In fact, the World Health Organization recently recommended that just five percent of your daily calories come from added sugar (about 25 grams of sugar a day), cutting their previous recommendation in half. That might seem pretty strict, but recent research has found that too much added sugar is dangerous no matter what you weigh.
Luckily, you really can satisfy your sweet tooth with the all-natural stuff—like the natural sugar found in fruit and milk. Not convinced? These mini banana bundt cakes are deliciously sweet and completely free of added sugars!
Mini Banana Bundt Cakes
Makes 16 mini bundt cakes
4 over-ripe bananas, mashed with a fork
1 6-oz cup Greek yogurt
Splash of vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
1 whole egg
1 egg white
4 Tbsp pureed raisins
1 tsp baking soda
1/4 tsp salt
Dash of cinnamon and nutmeg (optional)
Handful chopped walnuts (optional)
1. Preheat oven to 350 degrees.
2. Mix the wet ingredients (bananas, greek yogurt, vanilla, eggs, raisins) together.
3. Mix the dry ingredients (flour, baking soda, salt, cinnamon, nutmeg, walnuts) together.
4. Mix the wet and dry ingredients together, then pour into a mini bundt pan. (You can also use a regular muffin tin.)
5. Bake for 25 minutes at 350 degrees. Depending on your oven calibration, these might take more or less time to cook. Check them after 15-20 minutes and then frequently thereafter to make sure they don't overcook. Take them out when they're starting to brown a little on top and a knife inserted in the center comes out clean. Let cool, and then serve.
